Rice starch, a soft, white powder over twice as expensive as wheat and cornstarch, is used by the food industry for its gel strength, gelling temperature and starch granule rigidity. Rice starch is often used as a thickening agent in infant formula, as it’s known to help babies keep their feeding down. In addition, rice starch is used in places where minimal effect on taste and good thickening are needed in food preparation and manufacturing.
