Chestnuts are the fruit of the sweet chestnut tree, which is edible when cooked. They are energy-rich and highly nutritious and contain a high proportion of starch, together with potassium and vitamins B and C. Autumn is the season for chestnuts in many parts of Spain. Particularly in the north, many regions host versions of the castanada festival to celebrate the harvest of these humble nuts. With its prickly shell and sweet aroma, the chestnut has a history on the Iberian Peninsula stretching back to the ancient Romans. The European sweet chestnut tree grows well in Spains hilly western interior and in parts of the north, so before the arrival of maize and potatoes from the Americas in the 16th century, chestnuts were an important part of the traditional Spanish diet. Chestnuts are commonly roasted and consumed as they are, or used as garnish or stuffing in meats or as an ingredient in salads and vegetable stews and for most of us they are a necessary ingredient to Christmas Desserts. Once cooked, the texture is slightly similar to that of a baked potato, with a delicate, sweet, and nutty flavour. Chestnuts can be dried and milled into flour, which can then be used to prepare breads, cakes, pies, pancakes, pastas, polenta, or used as thickener for stews, soups, and sauces.
