Sangri (Prosopis cineraria) is a small to medium size tree, found mainly in the Thar Desert of Rajasthan in India.Dried sangria are produced by harvesting the beans (pods) when they are fully mature and then drying them. Once they are dried and the skins removed, they may split naturally. It is brown to dark chocolate color after sun dried. It is main ingredient of rajasthani dish of panchkuta(Ker, Sangri, Kumatiya, Gundha, Amchur, Red Chilli). It is a rich source of protein, carbohydrate, fiber, vitamin c, and calcium. Its called a bio organic vegetable because It is growing without any human interference. We can preserve its dry format for indefinite time.
